A few Chinese buffets in this area include Mongolian grills.
Customers load up a bowl with meat - usually a choice of chicken, beef, pork, shrimp, maybe some scallops; vegetables - broccoli, water chestnuts, onions, maybe some mushrooms; spices - salt, garlic, red pepper, maybe some ginger; cooking oils and sauces; and maybe some noodles.
A guy at a super-hot round grill adds a squirt of cooking oil and maybe some soy sauce, stirs everything around and scrapes the finished product onto a plate.
The advantage of a Mongolian grill is that you can pick what and how much you want in your dish, and regulate the amount of salt and oil you're getting.
The disadvantage is that if you put together a bad combination of ingredients and it tastes awful, you have nobody to blame but yourself.
Now comes Genghis Grill - The Mongolian Stir-Fry, the central Arkansas outlet of a Dallas-based chain, to west Little Rock (in the former site of Fazoli's and, very briefly, Pasta Patch).
